I used to be that person who scoffed at vegetables on pizza. Why mess with perfection, right? Give me pepperoni, extra cheese, or bust. But then I had my pizza awakening at this tiny corner spot run by Maria, who basically strong-armed me into trying her zucchini and feta creation. One bite and I was hooked. This Mediterranean-inspired pizza with lemon and garlic is now my go-to for a fresh yet comforting meal.

Lemon & Garlic,  Here is where things get interesting. Lemon zest (and sometimes a squeeze of juice) lifts the richness of the feta, while roasted garlic mashed into a paste gives depth without overpowering. Raw garlic works, but roasted is mellower, letting the other flavors shine. 

How to Make This Mediterranean Pizza at Home 

I make this almost weekly now, and my method is simple: 

Prep the dough, Store-bought works, but if you have time, homemade pizza dough makes a difference. Stretch it thin for a crispier crust. 

Layer flavors, Brush with olive oil, smear on roasted garlic paste, then arrange those zucchini rounds like edible little coins. Crumble feta generously. 

Bake hot and fast 450°F (230°C) for 12-15 minutes until the edges are golden.

Finish bright, Fresh lemon zest and torn basil right at the end to make it sing.
